2020 Frappato

100% Frappato di Vittoria. Fermented and aged in concrete for 9 months prior to release. Light ruby-red colour in the glass, perfumed aromas of red wildflowers. On the palate, ever so slightly lifted notes of macerated raspberries, red currants and sweet spices with subtle acidity and soft tannins. Chill slightly before serving.

2017 Cerasuolo di Vittoria

Cerasuolo di Vittoria, named for the bright, cherry-red colour that a blend of Frappato (40%) and Nero d’Avola (%60) provides. Don’t let the colour fool you (ever), this wine is shockingly compelx and layered. Notes of black cherry, red blossoms, cedar and earth.

2020 Nero d'Avola (Nero di Lupo)

100% Nero d’Avola; fermented and aged in concrete for 9 months (followed by 3 in bottle) prior to release. Authentic Sicily in a bottle. Pronounced notess of ripe black cherries, plums, anise and pipe tobacco. Versatile.

2018 Maldafrica

‘Maldafrica’ takes its name from a Franco Battiato song and refers to the colour and aromas of the wine which call to mind the colours, smells and tastes of nearby North Africa. 50% Cabernet Sauvignon, 50% Merlot. Notes of dark and cooked fruit, herbs, spice and leather unfold with time open. Chalky tannins, pleasant acidity and a long finish.

2015 Cerasuolo di Vittoria delle Fontane

60% Nero d’Avola, 40% Frappato. The delle Fontane bottling of COS’ Cerasuolo comes from COS' best estates in the Fontane area of Vittoria. Spontaneous fermentation takes place in concrete tanks. The wine is then aged in Slavonian oak botti for 24 months followed by 2-3 years in bottle before release. This wine is substantial with notes of dark red fruit, roses, and cigar box – decant before enjoying.

2019 Pithos Rosso

60% Nero d’Avola, 40% Frappato. Spontaneous fermentation on skins for 15 days with indigenous yeasts in amphorae. Aged for 6 months in amphorae followed by 3 months in concrete tanks and finally three months in bottle before release. Decant before enjoying. Ripe red fruit notes, tobacco, potting soil, plush tannins, and a long finish.

2020 Zibibbo in Pithos

100% Zibibbo (aka Muscat di Alexandria) grown in the Marsala region (west of Sicily). 7 months of skin-contact in clay amphora. Deep gold in colour, pronounced aromas of lemon peel, peach, mango, sweet hay, elderflower and honey.

2020 Rami

The fan + team favourite skin-contact white from COS! Rami is 50% Grecanico, 50% Insolia. Vinified in concrete with skins for 7-10 days before pressing. Aged in concrete for 9 months before bottling. Pale orange-gold in colour. Hints of apricot, chamomile, dry hay, and wet stones. Light on its feet + super food-friendly.

2020 Pithos Bianco

100% Grecanico. 10-15 days of skin contact and aged in clay amphora for 7 months prior to bottling. More aromatic than Rami. Notes of yellow flowers, citrus pith and just-barely ripe stone fruit. Zesty and bone dry.

2017 Contrada Nero d'Avola

The grapes for COS’ Contrada are sourced from some of their oldest parcels in the Bastonaca area of Vittoria – an area with more limestone and clay-rich soils. Spontaneous fermentation takes place in concrete. The wine is then aged in large format Slavonian botti for 24 months followed by 2-3 years in bottle before release. Succulent and powerful with notes of ripe blue and blackberries, licorice, and spices.

2018 Metodo Classico

This traditional method sparkling wine is 100% Frappato. Primary fermentation in amphora with the second fermentation achieved in bottle through the addition of some 2019 grape must. The finished wine was bottled with zero dosage. Bright pink in colour with hints of strawberries and raspberries on the nose. On the palate, floral, rhubarb and cherry notes with a mineral backbone. Very complex and high-toned.

2019 Aestas Siciliae

Loosley translated ‘Aestas Siciliae’ means ‘Sicilian summer’. This unique, single-vineyard, late-harvested Moscato is grown at high altitudes in Vittoria. Fermented on skins for added structure and aged in stainless steel to preserve its fresh and fruity character, rich texture, and saline minerality which balances the wine's sweetness. This bottle will age for years and pairs beautifully with cheese or fruit-based desserts.
